Random food shot of what i had for lunch today.
it may seem like an odd combo of food, but trust me when i say it’s one of my favorite lunches, and not too bad for you too!

Steps:
bake a potato (many people like to pop it in the microwave for about 5 mins-poke a few holes in it- or you can wrap it in tinfoil and stick it in the oven for a bit as usual!)
cut in half and scoop out the center of the potato into a side bowl. make sure to keep the potato skin in-tacked.
mix in a bit of milk and butter with your potato with a fork until you have a quick little dish of mashed potatoes (make sure not to add too much milk or it wont hold the form in the potato skin- or taste very good!)
While you do this, steam a handful of broccoli in the microwave (or stove top if you prefer) for 2-3 mins
spoon the mashed potatoes back into the skins, add the steamed broccoli on top, and slice some very thin cheese to top it off. melt the cheese in the over or microwave and your done!
